When you can’t sleep…

And need a sweet fix that won’t bugger up the diet.

  • 1 large banana
  • 1 Tbsp Coconut Flour
  • 1 Egg

Mash up banana and tip into a bowl. Add egg and flour. Whisk together till you have a smooth pouring consistency. Warm a little butter or vegetable oil or use cooking spray in the pan and fry pancakes for about a minute on each side.
