INGREDIENTS.
50g Sun dried tomatoes
2 tbsp. Tomato paste
¼ Cup Vegetable Oil
1 tbsp. Italian herbs
1 tsp. Chili flakes
2 Clove garlic, grated
1 tbsp brown sugar
Sprig of fresh basil (optional)
METHOD.
Soak sun-dried tomatoes in warm water for approx. 5 minutes until they are soft. Drain and chop into small pieces.
Into a pan on medium heat, add oil and fry garlic and then follow through with the spices, tomato paste and sun dried tomatoes. Reduce heat and let this continue to cook for 5 minutes.
Turn off the heat and add chopped basil.

This sauce can be used immediately or can be refrigerated for later use.
